Pizza Stuffed Chicken

PIZZA STUFFED CHICKEN quickly became one of the most requested recipes by my kids and I love it because it’s low carb and super easy prep. This low carb chicken recipe is ready in about 45 minutes with just a few minutes of hands on time, too!

One of my biggest struggles when I first started eating low carb was ‘WHAT DO I FEED MY FAMILY?’

I certainly didn’t have the time or desire to cook my husband and kids one meal and myself another. Plus, in the beginning, it was extra tough for me to be around all my old carb-laden favorites.

It didn’t take long before I learned to create low carb recipes that my whole family enjoyed.

This pizza stuffed chicken is one of those recipes! What kid doesn’t love pizza?!

We top ours off with pepperoni, but feel free to get creative and top with your favorite pizza toppings. The sky is the limit!

How to make pizza stuffed chicken:

To start, you’ll want to slice a little pocket into the side of your chicken breasts. Sounds complicated, but watch the video at the side of the screen to see just how easy it is!

Drizzle your cut chicken with olive or avocado oil (affiliate) and then season with a bit of garlic powder, Italian seasoning, and salt.

Fill the pocket in the chicken breast with mozzarella and pepperoni, top the chicken with some low sugar pizza sauce, more cheese, and more pepperoni.

Bake this in the oven for about 45 minutes or until the chicken is cooked through.

Hi Karly, This was sooo good. My husband, who once owned an Italian restaurant , loved it ! The only thing I did different was: I chopped up the pepperoni before mixing it with the shredded mozzarella. That way I was able to get more pepperoni flavor throughout the stuffing. Great recipe! Thanks!

  2. The whole family loved this dish! I’m the primary cook and the primary follower of keto in our house, but everyone agreed these were delicious! I thought I’d have leftovers, as my kids (6, 9, and 12) usually only eat half portions at dinnertime, but these disappeared. I’ll have to make 6 next time! I also love how easy it is to personalize these, two kids don’t like pepperoni (I KNOW!) so I just left it out of one for them. I think you could just as easily add sauteed peppers or mushrooms or whatever you feel like to mix it up.

  3. Does the recipe for the pizza stuffed chicken work well using a crockpot? I have a large family with four adults. This looks amazing.

Hi Cheri! I’ve only made this in the oven. I’m not sure how well it would work in a crockpot. I think the sauce and cheese would slide right off due to all the steam in a crockpot.

  4. Those recipes are great because they can be served to the whole family, without having to cook two meals. Would have liked the print out for the cabbage lasagna too though.
