PIZZA STUFFED CHICKEN quickly became one of the most requested recipes by my kids and I love it because it’s low carb and super easy prep. This low carb chicken recipe is ready in about 45 minutes with just a few minutes of hands on time, too!

One of my biggest struggles when I first started eating low carb was ‘WHAT DO I FEED MY FAMILY?’

I certainly didn’t have the time or desire to cook my husband and kids one meal and myself another. Plus, in the beginning, it was extra tough for me to be around all my old carb-laden favorites.

It didn’t take long before I learned to create low carb recipes that my whole family enjoyed.

This pizza stuffed chicken is one of those recipes! What kid doesn’t love pizza?!

We top ours off with pepperoni, but feel free to get creative and top with your favorite pizza toppings. The sky is the limit!

Serve your pizza stuffed chicken breasts with a side salad topped off with the best ranch dressing recipe or my homemade Italian dressing.

How to make pizza stuffed chicken:

To start, you’ll want to slice a little pocket into the side of your chicken breasts. Sounds complicated, but watch the video at the side of the screen to see just how easy it is!

Drizzle your cut chicken with olive or avocado oil (affiliate) and then season with a bit of garlic powder, Italian seasoning, and salt.

Fill the pocket in the chicken breast with mozzarella and pepperoni, top the chicken with some low sugar pizza sauce, more cheese, and more pepperoni.

Bake this in the oven for about 45 minutes or until the chicken is cooked through.

We usually just have a green salad. Pizza and a salad has always been a go to for us. ๐Ÿ™‚

  1. I made this a couple of months ago and was a HUGE hit!! Thursday is my sons 11th birthday. With the current situation we have had to cancel the party. He has requested this dish for his birthday dinner!! Thanks for sharing this awesome recipe!!

Hi Kathy! I hope your guy still manages an amazing birthday! My son’s was earlier this month and it was different, for sure. But pizza chicken always helps!

Hi the recipe ingredient indicates ยผ cup Parmesan cheese. I donโ€™t see within the recipe when to use it

    1. Karly Campbell

Hi Ann! I think you could, if you put in a dish and keep the temp lower, but I haven’t tried it so I can’t help with temp/times.

I think I would also like this with maybe pineapple and ham, or maybe mushrooms, bell peppers and olives as another option. Let it person personalize what they like on their pizza chicken. ๐Ÿ™‚

do you serve anything as a side with this? I am trying this recipe as it looks delicious!! Thank you for sharing.

  6. Well, Iโ€™m not the greatest cook. I used chicken breasts much bigger than 6ozs but put in the amount of pepperoni & mozzarella suggested. Definitely not enough after cooking. I want to reheat and add much more โ€œstuffโ€. How would you suggest I do that? Thanks very much.

    1. Karly Campbell

Hi Stan! I’d just add more cheese/pepperoni/sauce on top. I wouldn’t try to stuff more inside.

I don’t put dairy products in the IP because I think they get a bit funky under pressure.

  7. This sounds awesome! I have a family member with a tomato allergy. Whatโ€™s a good alternative to the red sauce?

    1. Karly Campbell

Hi Jessica! I’m not sure what would be a good alternative that would still taste like pizza. What do you normally use to make pizza?

        1. I know bic I have a slight allergy it gives me bad heart burn and acid reflux so I use or make my own creamy white garlic sauce it is delicious

We use Rao’s marinara most of the time, but the generic store brand pizza sauce is usually low in sugar as well.

  8. This looks really good. I’ll try it next week. How do you think leftovers would freeze? (I’m a one person household)

    1. Karly Campbell

Should freeze great! It would probably freeze even better before baking next time. ๐Ÿ™‚

    2. Made this last night with 2 very large chicken breasts, I added just a little bit of sauce in the center, all I have to say is delicious!

  9. Michelle Carter

Can you please tell me how many calories per serving? Iโ€™m counting calories and would love to try this.
    Michelle

OMG!! I’m not a pizza fan but I made this and I got to admit, I LOVED IT! My husband loved it! It’s definitely staying on my menu! Thank you.

Hi Tanya! Healthy is such a subjective term – I find low carb/keto to be the healthiest way of eating and that’s what I share here. ๐Ÿ™‚

Say what?! Haha…I’ll let it slide, I suppose. If the hubby likes it, this would be a good meal prep one for him to take in his lunches. ๐Ÿ˜‰
