I mentioned a few days ago that my husband bought me a smoker for my birthday this year.
And here I am…showing you how to make pulled pork in a crockpot. Ha! It’s just two things – 1. I’m not sure how many of you actually have a smoker and would want a recipe for that (tell me if you do!) and 2. crockpot pulled pork is actually super delicious and so dang easy.
So today you get this keto pulled pork in the slow cooker! Lucky you!
Obviously, traditional sandwich buns are out for serving this pork if you’re low carb, so get creative!
We often eat this beer pulled pork over a pile of my keto coleslaw. It’s also good on salad with ranch dressing or fathead pizza.

Pork Shoulder – This cut of pork gets turned into tender, juicy magic after slow cooking in some beer! You can use bone-in or boneless, though we usually opt for boneless here. Using the crockpot to make low carb pulled pork is a foolproof method for making flavorful, tender pulled pork.
Beer – It’s going to add all the moisture needed for the slow cooking so that the pork doesn’t dry out plus some flavor. Use your favorite low carb beer or swap for chicken broth. A can of diet coke will work as well.
Seasoning – A simple mix of some garlic powder, onion powder, cumin, salt, paprika, and parsley is all that’s needed. For a sweeter rub, add your favorite brown sugar substitute.
- It’s beyond easy to toss a pork shoulder in the crockpot! It turns out tender and shreddable every time.
- This method is foolproof – the pork is hard to overcook in a slow cooker.
- We use beer in this recipe, but you could also use diet coke or chicken broth. You’ve got options!
How To Make Keto Pulled Pork:
Season – Start by placing your pork shoulder in a crockpot.
Stir together some cumin, garlic powder, onion powder, salt, parsley, and paprika and rub it all over the pork to coat.
Beer – Pour your favorite low carb beer into the bottom of the slow cooker. This doesn’t have a strong beer flavor at all, but feel free to use chicken broth if you prefer. A can of diet coke will add a bit of sweetness, if you’d rather go that route.
Slow Cook – Cover the slow cooker and cook on high for 4 hours or low for 8 hours. The meat is done when it easily shreds apart with a fork. Shred the meat and stir it around in the juices in the bottom of the slow cooker before serving.
What Readers are Saying!
“I made this yesterday, with the beer, Bud Light, and it was so good! I just need to make some coleslaw with it to really kick it up. I didn’t add any sauce to it either. It would good coming straight out the broth made.” – Robin
Serving Suggestions:
This keto pulled pork is a total favorite in my house. It’s seasoned really well and so tender.
We like to shred this up and serve it over a pile of our keto coleslaw. It also goes great on our keto hamburger buns or sandwiched between two chaffles.
You definitely don’t want to skip a drizzle of our tangy mustard BBQ sauce. It just works perfectly with the richness of the pork.
Not a fan of mustard? We’re still perfecting our traditional BBQ sauce recipe, but Sweet Baby Ray’s makes a fabulous sugar free version. It’s made with allulose, which is a natural sweetener that tastes like sugar.
If you haven’t made pulled pork in the crockpot before, you need to give it a try!
FAQs:
You may use any type of beer you like, but do look for one that’s low in carbs. Miller Light is an easy to find option.
I’m using pork shoulder to make this slow cooker pulled pork. You could also use pork butt, which is similar but has a bit more fat in it. Either one will get perfectly tender and juicy when slow cooked in the crockpot with some beer!
This keto pulled pork can be stored in the refrigerator for 4-5 days in an airtight container. Leftover pulled pork reheats well and is great for use in other recipes! You can also freeze it in a freezer safe bag for up to a few months.

Sounds like a delicious meal!

I try not to eat red meat and am eating low carb. Do you think this recipe would work with pulled chicken? How would I adjust the slow cooker cooking time?
Karly Campbell says
Hi Rachel! I think this would work great with chicken. I usually do fresh chicken breasts at about 4 hours on low in the slow cooker. Once it’s tender enough to pull, you’re good to go. 🙂
Rebecca Smith says
I have a pork butt instead of a shoulder. Do you think that would work ok?
Karly Campbell says
Yes, absolutely!
Dena Marshall says
Hi! Would this work with frozen pork? How to adjust cook time? Thanks!
Karly Campbell says
Hi Dena! I’ve never made this with frozen pork before. I’m not sure how much time it would add, but I’d guess at least a few hours.
Paige says
Julie, how did it turn out with the Coke Zero, instead of beer?
Cori says
I used Coke Zero instead of beer, and it turned out amazing!
Karly Campbell says
Awesome idea!
Julie says
I wonder could you use a Coke Zero instead of beer? No carbs, no extra calories, and it might sweeten it up a little bit!
Karly Campbell says
Sure, that should work fine!
Jon says
Hi Julie! How’d it turn out with the Coke zero?
Cris says
Hi Karla
I don’t have a slow cooker so how would you best cook this in the oven?
Karly Campbell says
I would cook this at 200 degrees for around 8-12 hours…the pork will need to hit 200 degrees to reach that stage where it shreds nicely and is super tender.
Lauren Sexton says
This recipe is so good! The pork doesn’t even need a sauce it has such great flavor! I am thinking about trying this method on ribs. Any advice?
Karly Campbell says
I think it’d work great with ribs!
Shannon Lefevre says
Karly, I am one week old in the whole keto thing. I made this tonight along with your ridiculously amazing bbq sauce. My kid was eyeroll all the way. Why can’t we just go to the restaurant we always go to….girl, you nailed it. I nailed it because of you! These recipes were outstanding and so easy. You are amazing! Thank you
Karly Campbell says
Ah, thank you, Shannon! So glad you’re finding the recipes helpful! 🙂
Cindy Turner says
The rub was very similar to the one I normally use. Didn’t have low carb beer so I used 3/4 cup chicken stock and 1/4 cup peach brandy. Also added 1/4 cup peach brandy to the mustard bbq sauce. Absolutely loved it! So much tastier than regular bbq sauce. Served it with the coleslaw recipe which I also loved. Definitely a keeper!
Nicole says
Keep in mind the brandy adds carbs!
Jill Daniele says
I wonder how this would do in an Insta pot? And how long on what setting???
Karly Campbell says
I would cut the pork into 4 big chunks and cook for 40 minutes with a natural pressure release.
Ana says
Yes please can I have a smoker recipe!! This would be amazing in a smoker!
Danielle says
I bought a bone-in pork shoulder… Not realizing the recipe called for boneless. How should I adjust?
Karly Campbell says
I don’t think you’ll need to adjust at all. Timing might be off a bit, but just cook til it shreds. 🙂
Crystal says
I tried this out but my meat never turned into shredded, it just stayed like a roast my grandma says I should have done low heat for a long time instead of high heat for 4 hours. Thoughts?
Karly Campbell says
It just needed to cook longer. Every slow cooker is different, unfortunately. Some run hotter/cooler than others. If it wasn’t shredding after 4 hours, it needed a bit more time.
Robin says

Robin says
I saw you could use chicken broth… would beef broth be a good alternative instead of the beer?
Karly Campbell says
yes, for sure!
craig says
how much (ounces) is the serving size?
Karly Campbell says
I didn’t measure out by weight. The nutrition was calculated based on this serving 12. 🙂
Carol Lettington says
In comments, you mention the NUTRITION was calculated base on 12, yet under Nutrient information states that it is based on 8 servings? Please clarify.
Karly Campbell says
Oh, I must have misspoke. I just went into the calculator and confirmed – it’s definitely calculated based on serving 8.
CAthy says
Hi , my pork still has the skin on – should I leave it on or should I remove it before cooking ?
Karly Campbell says
I would remove it. 🙂
Jeannette says
I am not a beer drinker, so I have no clue what kind to use. Also, do you have any idea if gluten free beer would work? I am sensitive to gluten. Thank you!
Karly Campbell says
Gluten free beer should work fine, just look for one that is low in carbs. Alternately, just use chicken broth. No need to buy a bunch of beer if it will never get drank. 🙂
Whitney Buck says
Looks delicious! Would love some smoker recipes. I got one last year and have been too intimidated to try much!
Karly Campbell says
I’m still learning myself, but I plan to get some good ones up before long! 🙂
Bob LeBlanc says
I have a smoker. Still looking for a pulled pork seasoning that’s not all sugar based
Karly Campbell says
I think this blend would work well in a smoker. You could add in some sweetener if you wanted more of a bbq flavor.
