Some people say that this chicken recipe is so good that you might just get a marriage proposal for serving it. I’m already married, so I can’t verify that, but I can verify that my husband went back for seconds and then stood at the stove eating sauce straight from the pan with a spoon. So…make of that what you will.
Our low carb marry me chicken really is everything my family loves in a meal. The chicken just gets seared in a bit of butter, but the magic comes in the form of a cream sauce that’s loaded with garlic, sun-dried tomatoes, and Parmesan. Nothing weird, no fancy ingredients, just simple goodness that feels legitimately special.
Our creamy garlic parmesan chicken is another big winner that features chicken with a creamy sauce, and this creamy lemon chicken is another favorite.
♥ 3 Reasons You’ll Love This Recipe:
The sauce is absolutely addictive. Creamy and zippy with those bright bursts of sun-dried tomato flavor – it’s the kind of sauce you’ll want to put on everything. (We serve it over mashed cauliflower specifically so we don’t waste a single drop.)
It’s deceptively simple. This looks and tastes fancy, but you’re basically just cooking chicken and making a pan sauce. If you can sauté and stir, you can make this.
20 minute dinner situation. This is my secret weapon for impressing people. They don’t need to know it took 20 minutes and one pan.
Ingredients, Swaps, & Tips:

- About the chicken: If you can find thin-cut chicken breasts, grab them – they cook evenly and quickly. But if you’ve got regular thick chicken breasts at home, just slice them in half horizontally to create thinner cutlets, or pound them to about ½ inch thickness.
- Spiciness: We use a 1/2 teaspoon of red pepper flakes just to balance out that creamy sauce. It doesn’t not make things spicy. Add more red pepper flakes if you want a real kick.
- Sun-dried tomatoes: Look for the kind that are oil-packed as they will offer the best flavor!
- Fresh vs. dried thyme: Fresh thyme is ideal here, but I get it – sometimes you don’t have it. Substitute 1 teaspoon of dried thyme if needed. Just add it with the garlic so it has time to bloom in the butter.
- Consistency: If you like your sauce a bit thinner you can add a splash more of the chicken broth. To thicken the sauce add a bit more Parmesan.
- Freshly grated: The best Parmesan for making the sauce is freshly grated! It melts better and gives the sauce a good creamy texture with rich flavor.
Step by Step:

Season the chicken breasts with salt and pepper and sear them in a hot skillet with a bit of butter. Set aside while you make the sauce.

Add a bit more butter to the skillet and cook the garlic, red pepper flakes, and thyme until they are fragrant.

Add the remaining ingredients to the pan and cook, stirring often, until the sauce is smooth, creamy, and thickened to your liking.

Add the chicken back to the skillet and coat it in that delicious sauce. Serve over mashed cauliflower with extra sauce.
Serving Suggestions:
Keto marry me chicken is about as versatile as it gets so you can serve this dish with pretty much any low carb side you’d like.
Try serving the chicken and sauce over some mashed cauliflower to soak up all that flavor! Cauliflower rice is another good choice to go with this.
We also like zucchini noodles, and pretty much any mix of roasted veggies!
A simple green salad tossed in this easy garlic dressing would add so much to this dinner!

Storage:
Fridge: Store leftover chicken in an airtight container for up to 4 days.
Reheating: The chicken and sauce can be warmed in a skillet over low heat with a splash of broth or cream to loosen the sauce.
Freezer situation: I haven’t tested freezing this one. Cream-based sauces can be temperamental when frozen and thawed, so I’d recommend making only what you’ll eat within a few days.
