Keto Marry Me Chicken

Ingredients

  • 4 thin-sliced chicken breasts
  • 1 teaspoon salt more to taste for seasoning the sauce
  • 1/2 teaspoon cracked pepper
  • 3 tablespoons butter divided
  • 2 cloves garlic minced
  • 1 tablespoon fresh thyme leaves
  • 1/2 teaspoon red pepper flakes more if you like it spicy
  • 3/4 cup heavy cream
  • 1/2 cup oil-packed sun-dried tomatoes minced
  • 1/4 cup chicken broth
  • 1/2 cup freshly grated Parmesan
  • Fresh basil for garnish

Instructions

  • Season both sides of the chicken with salt and pepper.
  • Heat a large skillet over medium heat and add 2 tablespoons of butter.
  • Once melted, add the chicken to the skillet and cook for 4-5 minutes per side, until chicken is cooked through. Remove chicken to a plate.
  • Add the remaining tablespoon of butter to the skillet and melt. Stir in the garlic, fresh thyme, and red pepper. Cook until fragrant, about 1 minute.
  • Add the heavy cream, sun-dried tomatoes, broth, and Parmesan to the skillet, stir to combine, and cook over medium heat, stirring often, until sauce has thickened a bit. Add salt to taste.
  • Return the chicken to the pan and drizzle the sauce over the top.
  • Serve with the sauce drizzled over the chicken and sprinkle with fresh basil.

Notes

We like just ½ teaspoon of red pepper flakes to make this interesting. If you want more of a kick, add a full teaspoon.
If you don’t have fresh thyme, you can substitute 1 teaspoon of dried thyme.
We like to serve this over mashed cauliflower or cauliflower rice to soak up that extra sauce. Don’t let a drop of the sauce go to waste - so good!
If you'd like a thicker sauce, add more Parmesan. If you'd like a thinner sauce, add more broth.
