Ingredient, Swaps, & Tips:

Tortillas: I use Mission low carb flour tortillas because they’re easy to find in any grocery store and they actually taste like traditional tortillas.
For the chicken, rotisserie is your best friend here. Just shred it up and you’re golden. If you use canned chicken, things might get a bit salty so look for low sodium.
Cheese situation: Cheddar is classic, but you can totally swap in crumbled blue cheese if that’s your vibe. Pepper jack would add a nice kick too.
Spice level: The recipe as written is pretty mild – perfect for kids or people who like buffalo flavor without the pain. Want more heat? Add cayenne pepper to the mixture or use a spicier wing sauce. Our keto buffalo sauce is perfect for customizing the heat.

Step by Step Instructions:

Add everything but the cheddar and tortillas to a mixing bowl and stir well to combine. The mixture will look like buffalo chicken dip at this point.

Spread the mixture evenly between two tortillas and sprinkle with cheddar cheese.

Roll the tortillas up tightly and slice into 5 pinwheels each. I trim the edges off to keep things neat, but this is optional.

Spritz everything with oil and air fry for 5 minutes or until the tortillas are as crispy as you’d like.
Serving Suggestions:

Hot: Personally, I like these best when they’re hot, crispy, and melty from the air fryer.
Room Temperature: Also completely delicious at room temp, making these great for parties!
Cold: You can eat these straight from the fridge (skip air frying if that’s your plan), if you prefer. Makes a great late night snack this way.

Storage & Freezing:
Fridge life: Keep for up to 4 days in an airtight container. Reheat in the air fryer for 3-4 minutes to re-crisp, or microwave for 30 seconds if you don’t care about crunch. Alternately, eat them cold! The tortilla may start to get soggy the longer it sits, so just be aware of that.
Make-ahead: Assemble and slice up to an hour or two before air frying – perfect for game day prep.
Freezer situation: Haven’t tried freezing these, but I think they’d do just fine. I’d try cooking them straight from the freezer until they were heated through and crispy.

Keto Buffalo Chicken Pinwheels
Ingredients
- 1 cup cooked, shredded chicken
- 3 tablespoons buffalo sauce
- 2 tablespoons cream cheese room temperature
- 1 teaspoon ranch seasoning
- 2 large low carb flour tortillas
- ¼ cup shredded cheddar
Instructions
- Add the chicken, wing sauce, cream cheese, and ranch seasoning to a bowl and mash the mixture together with a fork until well combined. Taste and add cayenne pepper for more spice, if desired.
- Divide the mixture evenly between 2 tortillas and spread to the edges.
- Sprinkle the cheddar cheese evenly over each tortilla and roll up tightly.
- Use a sharp knife to trim the edges of the tortilla off and then slice each tortilla into 5 pieces.
- Arrange the pinwheels in an air fryer basket that’s been spritzed with oil spray or lined with parchment in an even layer. Cook at 370 degrees for 5 minutes or until as crispy as you’d like.
- Serve immediately.
