These crispy Keto Buffalo Chicken Pinwheels are ready in 15 minutes with rotisserie chicken. The air fryer crisps the low carb tortilla perfectly while keeping the buffalo chicken filling warm and melty. Perfect for game day, quick lunches, or easy snacks!

Ingredients

  • 1 cup cooked, shredded chicken
  • 3 tablespoons buffalo sauce
  • 2 tablespoons cream cheese room temperature
  • 1 teaspoon ranch seasoning
  • 2 large low carb flour tortillas
  • ¼ cup shredded cheddar

Instructions

  • Add the chicken, wing sauce, cream cheese, and ranch seasoning to a bowl and mash the mixture together with a fork until well combined. Taste and add cayenne pepper for more spice, if desired.
  • Divide the mixture evenly between 2 tortillas and spread to the edges.
  • Sprinkle the cheddar cheese evenly over each tortilla and roll up tightly.
  • Use a sharp knife to trim the edges of the tortilla off and then slice each tortilla into 5 pieces.
  • Arrange the pinwheels in an air fryer basket that’s been spritzed with oil spray or lined with parchment in an even layer. Cook at 370 degrees for 5 minutes or until as crispy as you’d like.
  • Serve immediately.

Notes

Serve with our keto ranch or blue cheese dressing for dipping.
If you’d like spicier pinwheels, add cayenne pepper to the wing sauce for an extra kick.
You may swap the shredded cheddar for crumbled blue cheese, if preferred.
