As a Midwestern, one thing is for certain and that’s gravy. I’m drizzling it over the turkey and the mashed cauliflower and, yes, maybe considering popping a straw into the gravy boat after dinner.
Gravy is traditionally made with flour or cornstarch, meaning it’s full of carbs and not a great choice for a low carb lifestyle. Our keto gravy makes this silky sauce an option for just about anyone. It’s gluten-free too!
We’re making this one super simple by using broth or stock and amping up the flavor with a dash of, wait for it, soy sauce or coocnut aminos. Adds all that savory goodness you want in a gravy!

- Broth: Chicken broth is a go to for gravy but you can also use beef broth or turkey broth here instead if you prefer. It just depends on the flavor you like and what you’re serving your gravy with.
- Drippings: If you’ve got pan drippings from a roast turkey or other meats use those instead of broth. Extra flavor!
- Xanthan Gum: This is a natural thickener used in quite a bit of foods! It’s made by fermenting sugar. A little goes a long way and things start to get slimy if you use too much.
- Clumping: If the xanthan gum clumps in your liquid, use a blender or frother to break up the clumps.
- Soy Sauce: This adds a nice depth of flavor to a box of broth. You can use coconut aminos instead if you avoid soy.
- Dairy-Free: Try the drippings from your roasted turkey or coconut oil instead of butter for a dairy-free alternative.
- Seasoning: We just add a bit of garlic powder. Most of the flavor comes from the broth and any pan drippings that are added, but you can spice it up however you like. Black pepper is always a must for me with gravy as well.
Step by Step:

Melt the butter in a small sauce pan and then whisk in the garlic and xanthan gum.

Add the broth and soy sauce to the pan and whisk well.

Continue cooking and stirring for around 5 minutes for the gravy to thicken.

Fridge: You can keep any leftover keto gravy sealed in a jar or container in the fridge for up to 4 days.

Keto Gravy
Ingredients
- 3 tablespoons butter
- 3/4 teaspoon xanthan gum
- ½ teaspoon garlic powder
- 3 cups chicken broth see notes
- 1 teaspoon soy sauce or coconut aminos
- Salt and pepper to taste
Instructions
- Add the butter to a saucepan over medium heat and let melt.
- Once melted, stir in the xanthan gum garlic powder and cook until fragrant, about 30 seconds, whisking constantly.
- Add the chicken broth and soy sauce to the saucepan and whisk well.
- Continue cooking, stirring constantly, for around 5 minutes, until the gravy has thickened.
- Season with salt and pepper to taste.
