There used to be this bagel shop in my town that sold bagel sticks – basically a bagel breadstick.
Y’all, those were the best bagels of my life.
Just me + a bagel stick + a bucket of cream cheese = pure heaven.
These days I avoid the bagels, but when the chaffle train came screeching into the low carb train station (I’ve had too much coffee today and my writing shows it), I instantly thought of an Everything Bagel Chaffle.

How to make keto bagel chaffles:
For the chaffle batter, you’ll need 1 egg, some mozzarella cheese, a little coconut flour, and some Everything Bagel seasoning. <— You can certainly use store-bought seasoning, but my recipe is quick, easy, and perfect!
Whisk together your egg, coconut flour, and seasoning and then stir in your mozzarella.
I really prefer finely shredded cheese in my chaffles, but use what you’ve got.
Add half of that mixture to your waffle iron and cook for 3 minutes. Repeat with the rest of the batter.
Bam. Everything Bagel Chaffles!
If you’re really feeling that bagel vibe, cut the center out of the chaffle with a sharp knife! So simple.
Of course, it would not be a bagel without a THICK smear of cream cheese. Load ‘er up.
What kind of waffle maker do you need?
You are going to want a mini waffle maker for this recipe. This size will make 2 bagel-sized waffles.
I use the Dash Mini Waffle Maker.

Low Carb Bagel {Chaffle Bagels!}
Ingredients
- 1 large egg
- 1 teaspoon coconut flour
- 1 teaspoon Everything Bagel seasoning plus more, for serving
- 1/2 cup finely shredded mozzarella cheese
- 2 tablespoons cream cheese for serving
Instructions
- Plug in your mini waffle iron to preheat.
- Whisk together the egg, coconut flour, and bagel seasoning until well combined. Stir in the cheese.
- Spread half of the egg mixture into the waffle iron and cook for 3 minutes.
- Remove the waffle and repeat with the remaining egg mixture.
- Spread each bagel waffle with cream cheese and sprinkle with additional bagel seasoning, as desired.

New on board the chaffle train, but so thankful I found your recipes! Iโm obsessed! My favorite part is that your recipes are the perfect portion sizes for me! I had gastric bypass surgery 18 months ago and 2 mini chaffles are a meal for me! I usually canโt even eat quite all of them, but I donโt feel wasteful having to throw a few bites out! I can have some carbs in moderation, but I prefer to just stay away since they were always what got me in trouble! Haha I have many of your other recipes bookmarked to try as well! Has anyone tried making these with Bob’ Red Mill gluten free flour? I cant wait to try these. I have a belgian waffle maker and figured they could be cut in half to make sandwiches. I am so excited to try. Love your recipes, they all sound so good.

The inserts don’t come out, but it’s nonstick and I’ve only just wiped it down between uses. No issues whatsoever.

Loved it with avocado on top as one person said, but couldnโt get it as crisp as I wanted. I wonder if putting the cheese in first, then on top will give it the crispiness. Will try that today. So nice to have bagels again.

I just tried the recipe this morning but forgot to add the coconut flour just cause Iโm so used to not adding in flour when I make my chaffles, as I havenโt moved past the simple egg and cheese version yet. Was bummed I forgot but they still turned out great! Fantastic substitute for the real thing!! Yummy

Hey Michelle! I actually almost bought a mini donut maker today to test out chaffles in there. It’s so easy that I vote you give it a try! I can’t imagine they won’t turn out well, but I haven’t tried myself. For waffles, we toast these again the next day to crisp them up. Not sure how you’d reheat donuts though. They’re probably best fresh.

I just picked up the Dash Mini Waffle maker and the Dash Mini Grill today at Bed, Bath and Beyond using my discount coupons..what a deal! Cannot wait to try them… makes ng this mini bagel the morrow but It’s have a question .. Doesn’t the Mini Waffle Maker need to be sprayed or bushed wit oil of some kind prior to pouring out in the batter and again for each waffle? Also, is there “Everything Spice” readily available in the food stores? Tomorrow I’m going to the market to look for the “Everything” seasoning…also, can I use Low Moisture Part Skim Mozzarella Cheese or must it be full fat if you are lactose intolerant?

Hi Maria! Good find on the waffle maker!
I sprayed my waffle maker the first time I used it, but haven’t sprayed it since. The Dash is very non-stick. You can find Everything Bagel spice at Walmart and Trader Joe’s…not sure about anywhere else. I believe you could use whichever type of cheese you prefer to make these, but I can’t advise what to use based on lactose intolerance.
