There are a few recipes that I’ve been hesitant to make low carb.
Chili was one of those recipes.
You see, I had a recipe that I loved and I just didn’t believe I’d be able to make a low carb version that could compete with it.
Happy to admit I WAS WRONG.
I was so wrong. So so wrong.
I’m straight up obsessed with this low carb chili recipe and I think you will be too! It’s seriously flavorful and really easy to make! You’re going to want to make this one immediately!
How to make this low carb chili recipes:
We’re going to start by browning some ground beef with onion and bell pepper. This is a super hearty chili and we like lots of beef here!
Once the meat is browned, you’ll add in some minced jalapeno and garlic. The jalapeno doesn’t make this too spicy, but it does give it a nice little kick of flavor. Feel free to adjust to your own tastes.
Season things up with some chili powder, cumin, and salt.
Tomato products can be pretty high in carbs, so rather than using tomato sauce like I would in my traditional chili recipe, I’m using tomato paste and beef broth. Trust me…this is going to be good.
You’ll also stir in a can of diced tomatoes.
Simmer your chili for as you’d like…the longer it cooks the more flavorful it gets and the more tender the beef gets.
I like to let it simmer for a couple of hours over really low heat (you may have to add a little more beef broth if too much boils off) but I’ve also served this after just a 20 minute. It’s delicious either way!
We top our chili with freshly grated cheddar and a dollop of sour cream.
Chili without beans:
People have very strong feelings about chili and whether or not it should include beans.
I like it both ways, but if you’re eating a low carb diet, you should probably skip the beans. They’re loaded with carbs.
This keto chili recipe is plenty hearty and filling without the beans. Bet you don’t even miss them.
What to serve with chili:
I vote that you make my low carb cornbread. It doesn’t actually contain any corn, but I’ll bet you could completely fool your friends and family into thinking it’s the real deal. Taste and texture are spot on, if you ask me!

Keto Chili
Ingredients
- 1 ½ pounds ground beef
- 1 yellow onion diced
- 1 green pepper diced
- 1 jalapeno minced
- 1 clove garlic minced
- ¼ cup tomato paste
- 15 ounces canned diced tomatoes
- 2 cups beef broth
- 2 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon salt
Instructions
- Add the ground beef, onion, and bell pepper to a large deep pot and cook over medium heat, breaking up the meat as it cooks. When meat is cooked through, drain fat from pan.
- Add the jalapeno, garlic, tomato paste, diced tomatoes, beef broth, chili powder, cumin, and salt and stir.
- Bring to a boil and reduce to a simmer. Simmer for at least 20 minutes, preferably an hour for the best taste and texture.
- Serve with sour cream and shredded cheddar, as desired.

YUmmy. I made this twice. Once by the recipe and once with a few changes. It was great both times. (First time I didn’t have cumin) Second time, I added some celery and swapped out about a quarter pound of ground beef for one hot sausage link. This probably added about 3 carbs to the pot I think–one for the celery and 2 for the sausage, but still low carb and the hot sausage gave it a spicy flavor I missed previously. Watch your chili powder some of them are massively high in carbs (sugar). Top with cheese to get your fat macros. I also did not drain the fat. I may try it again with the low carb soy black beans one of the comments mentioned. I missed the beans a little, but still good.

Yum! I did substitute celery for onions and accidentally doubled the cumin, but otherwise followed the recipe. I will definitely be making this again. I ate half of it with some of your low carb cornbread crumbled in it since thatโs what I love doing with traditional chili and cornbread.

Everything was counted, but I can’t guarantee the results are 100% accurate. My recipe card pulls the nutrition automatically.

I used ground turkey instead of beef, and chicken stock instead of beef stock.
Really good!!! (Oh and I doubled the recipe, cause my family can put away massive amounts of chili)
And I used your โcornbreadโ recipe- For the cornbread I Did not use coconut flour, instead used 2x almond flour. And did not add sweetener. – loved it!

You’d need to enter that into a nutrition calculator to figure it out. There are lots of free ones out there, maybe try My Fitness Pal?

I am sorry I made a few typo errors and I wish to comment to correct my mistakes , starting with the first sentence.
I noticed no one mentioned making Keto Chili with Beans , because regular beans are so high in carbs, but if you use
EDEN BRAND BLACK SOY BEANS , Rinse well before adding to the Chili Pot Because Black Soy Beans are all Fiber , the chili
remains very LOW CARB BECAUSE you are using Black Soy Beans, and they are delicious, you cannot tell the difference they are
so delicious . Give it a try, My family would not eat chili without beans , THEY YELL, ITS NOT CHILI , WHERE ARE THE BEANS?

I think the cube would work fine, but you’d need to add the liquid as well.

Iโve had a few different Keto Chili recipes and this was easily my favorite. I didnโt use as much beef broth as suggested because we like our chili pretty thick but that is the only change I made. The perfect hearty meal for a chilly night!

You could use turkey. Not meeting your fat goal is okay…you want to eat enough fat to keep you full.

I love all your recipes to date But your Chili recipe just has to be made slightly different . People listen up exchange out your hamburger grind for Chili ground Brisket meat .I wait when it is on sale and buy 2 at a time . Then ask the butcher to Chili cut it for me but use the next size up in grinding it. You don’t want the blade the cuts the chili grind in its to small. Sounds like a lot of work in one way but oh so much flavor is added when the cut is thicker and it cooks up wonderful . If your butcher doesn’t have that blade call a meat market they do.
