Swaps & Tips

Want to switch things up? Here’s what I’ve learned works (and what doesn’t):
For the buffalo sauce: I’ve found that Frank’s Red Hot makes this spicier than Frank’s Wing Sauce. You can swap them 1:1, but the regular hot sauce definitely brings more heat. If you want it extra spicy, stir in a teaspoon or two of ground cayenne pepper.
For the chicken: Rotisserie chicken is your friend here! It saves so much time. You can also use leftover grilled chicken or even canned chicken in a pinch. Just make sure it’s well-drained if you go the canned route and know that things might be a bit saltier.
For the cheese: The cheddar and mozzarella combo is perfect, but you can mix it up with monterey jack or even add some pepper jack for extra spice. I wouldn’t recommend pre-shredded cheese though since it doesn’t melt as smoothly. Blue cheese is completely optional.
Make-ahead magic: You can assemble this completely and just bake when you’re ready. Perfect for game day prep or bringing to parties.
Low Carb Dipping Options

This is where the magic happens—you’ve got so many good options that you won’t even think about chips:
Fresh & Crunchy:
- Cucumbers (my personal favorite)
- Mini peppers
- Celery sticks
- Broccoli and cauliflower
- Baby carrots (just watch the carbs, they add up!)
Crispy Options:
- Parm Crisps
- Pork rinds
- Low carb crackers
- Quest chips
- Low carb tortillas cut into triangles and baked until crispy
Storage

Fridge life: Keeps for up to 4 days covered. Reheats beautifully in the microwave without getting weird.
Reheating: Microwave works great, or you can pop it back in a 350-degree oven for 10-15 minutes to get it bubbly again.
Freezer situation: Honestly, I’ve never tried freezing this because it disappears too fast in our house, but cream-based dips can get a little funky when thawed.
Turn any leftover dip into a buffalo chicken flauta! Use low carb tortillas, roll the dip up, and air fry as directed at the link!

I guess I should have mentioned I hate blue cheese…lol

Love the recipe! Blue cheese is traditional with Buffalo wings/chicken, just an aside here. Because the โBuffaloโ in Buffalo chicken originated in Buffalo. New York. So Buffalo should always be capitalized. Besides, buffalo donโt have wings or eat chicken. So knosh on this awesome Buffalo chicken dip and contemplate origins.
