I’m curious how many of you use your slow cooker year round. I know it has a reputation for being a ‘winter’ appliance, but we use ours quite a bit in the summer too. It saves us from heating up the kitchen and it’s convenient no matter what the weather is like. 😉

This crockpot cabbage soup is packed with beef, cabbage, celery, onion, and I even threw in a carrot! Yes – a carrot, on a low carb diet.
Don’t freak out about the single carrot in this giant pot of soup – it adds a little pop of color and flavor and I literally just used one carrot throughout the whole pot of soup.
You can definitely leave the carrot out, but it only adds less than 1g net carb per serving, so I think it’s super worth it for that vibrant color and little pop of sweetness. 🙂

Cabbage – You’ll need one head of cabbage, chopped into small chunks.
Ground Beef – I used lean ground beef in this keto cabbage soup recipe but you could also try it with other types of ground meat, like chicken or turkey! And if you want to make this soup even heartier, try using cubed beef stew meat instead of ground beef.
Broth – Beef broth adds a nice savory flavor.
Veggies – In addition to the chopped cabbage you’ll also add in some chopped onion, celery, carrot, and minced garlic.
Seasoning – Italian seasoning is a nice, classic flavor for this soup but feel free to experiment with other seasoning blends.
Easy to toss in the crockpot and set it and forget it.
This soup is fairly light, but still nice and filling.
Easy to customize with other cuts of beef or types of meat.
How To Make Cabbage Soup With Beef:
- Beef – Brown the beef and onion in a skillet. Drain and then add to the crockpot.
- Veggies – Add the cabbage, celery, onion, carrot, and garlic to the pot.
- Broth – Pour the beef broth over the veggies and give it a stir.
- Cook – Cover and cook on high for 4 hours.

Yes, you can freeze this cabbage soup recipe for up to two to three months. Let it cool completely before transferring to a freezer safe container. The texture of the cabbage and veggies will not be quite the same as when it is fresh though.

Crockpot Cabbage Soup with Beef
Ingredients
- 1 pound lean ground beef
- ½ onion chopped
- 2 stalks celery chopped
- 1 carrot chopped
- 2 cloves garlic minced
- 1 medium head cabbage chopped
- 5 cups beef broth
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
Instructions
- Brown the beef in a medium skillet over medium heat, breaking it up as it cooks, until mostly cooked through.
- Add the onion to the beef and continue cooking until meat is completely cooked through.
- Drain the grease and add the beef and onion to a 5 quart crockpot.
- Add the celery, carrot, garlic, cabbage, beef broth, Italian seasoning, and salt to the crockpot and cover.
- Cook on high for 4 hours.

I made this—also with some modifications. I cooked ground turkey and onions in the microwave (about 3 minutes, stirring until cooked) and I used turkey stock (I have a “no red meat” person in my home.) Very good! Quick to assemble, delicious and made the house smell wonderful—along with the zucchini wheat bread (Better Homes & Gardens recipe) baking in my bread machine! Thank you!

Awesome recipe. So quick and easy. I added extra carrots (sorry, not sorry lol) and a can of diced tomatoes (we add that stuff to a lot of our soups). We made it in the crockpot before going to pick up our newst rescue pup so the house would smell good for him when he came home! We’ve dubbed it Niven Stew in his honor.

I added a can of corn and used the Instant Pot for 12 minutes. I feel like flavor was missing, so will add something else next time. For now, salt and pepper work. I do like this dish!

I’ve made soup like this for years. My recipe is a bit different though. Instead of Italian seasoning I use dried basil. I also add one can of diced tomatoes and about 10 minutes before it’s done I add 1/3 cup of quick barley. My favorite soup!

I love beef barley soup but my diabetic doctor says it’s a grain and since I’m on a grain free diet I won’t be adding. If anyone knows a good non grain sub for barley though, I’m all ears… I’m avoiding wheat, barley, rye, rice, etc. Been subbing Almond flour, Coconut flour and ground Golden Flax fairly successfully.

Quinoa is a great way to substitute for grain. Its actually a seed also high in protein. I am diabetic and I eat Quinoa all the time. Its also versatile check out all the recipes for it.

Just be sure to watch the carbs on quinoa. It has more carbs than brown rice, even if it is grain free. 🙂

I made this last night and I was really impressed, for such a “humble” recipe it was delicious. I used my mandolin to shred the cabbage so it very much felt like I was eating noodle soup! This will go into the rotation for sure.

When you dont want to chop the cabbage you can buy bag of slaw mix. I know doesnt sound like much but im no cook so i take a short cut when i can

I’ve used this recipe before from an Eastern European cooking website, but it used Smoked Paprika as the seasoning. I would highly recommend it over the Italian seasoning.

I made this tonight and my family, including teenagers, loved it. I was in hurry so I used my insta pot. I added some cut up bacon. I didn’t have beef broth so I used chicken broth. I didn’t brown or drain the meat or bacon. I just threw it all in the pot raw and set it to 15 min. It was yummy, not greasy maybe bc i used lean hamburger meat.
