Well, it’s official.
I have been making a different type of chaffle every single day since I discovered them and not only am I hooked…my family is too!
My daughter asked for a little chaffle lesson this morning so that she could make her own for breakfast. And, no, she’s not low carb and yes, we do actually have a box of Eggos in the freezer for her to grab on busy mornings.
If that doesn’t tell you how good chaffles are, well, I don’t know what will. You’re just going to have to try them for yourself! ๐

These chocolate chip chaffles are super simple with just a handful of ingredients and they’re ready in minutes. We serve these keto waffles at breakfast with whipped cream or for dessert with a scoop of low carb ice cream!
How to make keto waffles with chocolate chips:

You’re going to need an egg, some finely shredded mozzarella cheese (just trust me), a little coconut flour, sweetener, vanilla, and some sugar-free chocolate chips.

Whisk together your egg, coconut flour, sweetener, and vanilla and then stir in the cheese.
This looks a little funky, but you just have to have faith that I wouldn’t lead you astray. ๐
Spoon half of the batter into your mini waffle iron and then dot the top with chocolate chips. Use a spoon to spread a bit of batter of the chips so they don’t burn when you close the waffle iron.
Close the iron and cook for 3-4 minutes, depending on how crispy you’d like your waffles.
Repeat with the rest of the batter, stack ’em up, and squirt on some whipped cream.
Breakfast is served!

You are going to want a mini waffle maker for this recipe. This size will make 2 Eggo-sized waffles.

Chocolate Chip Chaffles
Ingredients
- 1 large egg
- 1 teaspoon coconut flour
- 1 teaspoon monkfruit sweetener
- 1/2 teaspoon vanilla extract
- 1/2 cup finely shredded mozzarella
- 2 tablespoons sugar-free chocolate chips
Instructions
- Plug in your waffle iron to preheat.
- Add the egg, coconut flour, sweetener, and vanilla to a small bowl and whisk together with a fork.
- Stir in the shredded cheese.
- Spoon half of the batter into the waffle iron and dot with half of the chocolate chips. Spread a bit of batter over each chocolate chip.
- Close the waffle iron and cook for 3-4 minutes or until as crisp as you'd like.
- Repeat with remaining batter.
- Serve hot with whipped cream or low carb ice cream.

First of all , this is not aimed just at you, but can I ask to why if the serving is 2 chaffles why are there 3 on the plate. Iโm used to seeing the larger than serving portion with non keto pictures and commercials and itโs very misleading as is with this. I go straight to the servings on a recipe and it typically doesnโt match what the portion shown is. Itโs misleading and disappointing. I have enjoyed making many of your recipes.

Hi Lisa! It’s not meant to mislead. But a stack of two waffles isn’t nearly as appealing as a taller stack so that’s why you see more. I clearly state the serving size in the recipe card so there shouldn’t be any confusion.

The video is showing a double batch. For a single batch (2 chaffles) use 1 egg as stated in the recipe.

Can You Use Almond Flour Instead Of Coconut Flour. And Instead Monk Fruit Can You Use Serve Sweentner. Do You. Have To Add Mozzerella Also

If you use almond flour, you’ll probably want to use a tablespoon instead of a teaspoon. You can use any type of sweetener you want as long as it measures at a 1:1 ratio for sugar. Any type of shredded cheese will work here, but mozzarella is best because it doesn’t add flavor to the waffles. Cheddar would create the same texture and work just fine, but you’d have cheddar flavored chocolate chip waffles at the end.

I mostly just use Redd-Whip, but a cup or so of heavy cream and a tablespoon of powdered sweetener is what I do for homemade. ๐

Your nutrition facts, is that for 1 chaffle or is the the nutrition for all ingredients used, I know in the mini waffle makers, 1 batch can make 2 chaffles.

Hi Stacey! There are so many different sizes of waffle irons, I really can’t tell you. You’ll likely just be able to add the full amount to your iron and end up with one larger waffle instead of two mini.
