I’m a sucker for buffalo chicken and this stuffed buffalo chicken doesn’t disappoint! It has the perfect balance of spicy buffalo sauce cooled down with a little ranch dressing. The cheesy filling is seasoned with ranch too!
I’ve always been a big fan of buffalo chicken and we regularly go to Buffalo Wild Wings. Their naked tenders are delicious dipped in a little mild sauce with some ranch or blue cheese!
It gets expensive to eat there too often though, so I’ve been experimenting with loads of buffalo chicken recipes.

This stuffed buffalo chicken recipe is super easy to prepare and I know y’all are going to love it.
My spinach stuffed chicken is still the most popular recipe on this site, but I have a feeling this keto buffalo chicken version might just give it a run for it’s money. 😉
How to make this stuffed buffalo chicken recipe:

To start, we’ll mix up the cheesy filling. This is just three ingredients: cream cheese, grated cheddar, and ranch seasoning.
If you’re following a clean keto diet, you’ll want to use this Primal Palate ranch seasoning. Clean ingredients and a great taste!
You can try swapping in blue cheese for the cheddar, if that’s your style. I’m not a fan myself. 🙂
Combine all that and slice into the side of a chicken breast to form a little pocket. Stuff the cheese in the pocket.

Once your chicken breasts are filled with the cream cheese mixture, brush some buffalo sauce over the top and pop them in the oven.
These will bake in about 25 minutes and I like to brush more buffalo sauce on top every 10 minutes or so.
When it’s time to serve, drizzle with ranch dressing, sprinkle with parsley, and dig in!
This cheesy stuffed chicken is so filling and will seriously be a total hit!

Buffalo Ranch Stuffed Chicken
Ingredients
- 4 boneless chicken breasts about 6 ounces each
- 4 ounces cream cheese room temperature
- ½ cup grated cheddar cheese
- 1 packet ranch seasoning
- 1/2 cup buffalo sauce
- 1 tablespoon fresh parsley
- Ranch or blue cheese dressing for serving
Instructions
- Preheat oven to 375 degrees. Spray a 9x13 baking dish with non-stick spray.
- Place the chicken breasts on a cutting board and use a sharp knife to cut a pocket into the side of each breast, being careful not to cut all the way through. Set chicken aside.
- Add the cream cheese, cheddar, and ranch seasoning to a small bowl and stir well to combine.
- Spoon the cream cheese mixture evenly into piece of chicken.
- Place the chicken in the prepared baking dish and brush heavily with the buffalo sauce.
- Bake for 25-35 minutes, brushing with additional sauce every ten minutes, until chicken reaches 165 degrees.
- Sprinkle with freshly chopped parsley and drizzle with ranch or blue cheese dressing before serving.

Made this for dinner tonight, we’re carb cycling and this made a perfect low carb meal. I get such a hankering for buffalo sauce, and my husband isn’t a huge fan, so this was a great way to sneak it in! I used Buffalo Wild Wings Medium Sauce, sooooo good.

You can use a thermometer to check for doneness next time and pull it when it reaches 165. Just be careful to test the meat and not the filling.

Very good but 25 minutes is not nearly enough time, especially for two breasts. I had to reheat my piece of chicken twice because it was still kinda raw after 40 minutes.

Hi Josh! I’m not sure what you mean by 2 breasts. I’ve not had an issue getting the chicken cooked through at around 25 minutes, but every oven is different and I definitely recommend using a thermometer to test for doneness.

Hi Rachel, much more accurate to use a thermometer to check for doneness. The recipe does state 25-35 minutes or until it reaches 165. Some ovens run hotter than others and all chicken breasts are different sizes, so there is no real set time for chicken. You just cook until it’s finished.

The filling is pretty rich, so we usually keep it simple with a green salad and some form of steamed or roasted veggie. Cauliflower rice or mash would be good too. 🙂

I made this recipe for the first time and the entire family really liked it. They all said I needed to keep it on repeat. It’s a great low carb meal. I think next time I might only use 1/2 of the dry ranch. It was a little salty although I didn’t add any extra salt.

If you use the ranch seasoning mix instead of the ranch dip mix, it’s a bit less salty. I just realized this myself not too long ago, but there’s a lot less sodium in the seasoning blend than the dip blend. I need to update the post about that. 🙂

Just had this for supper with my son. We both loved it. This is absolutely delicious, and will definitely be made again and again. My only question or concern is the protein content you have in the post. In you’re post you have the protein of 6 ounce chicken breast at 20 grams. When I entered my chicken at 180 grams which is slightly more than 6 ounces Carb Manager App said that was 56 grams of protein. I loved this and will definitely make again but will have to watch my protein so I don’t go over my allowed or recommended amounts.
