Low Carb Crockpot Meatball Casserole

I've been living for this simple, cheesy crockpot meatball casserole lately. It's perfect for busy days when you realize you have no dinner plans early in the afternoon. Just dump everything in the crockpot, cover, and wait! So simple and you can serve it up so many different ways.

Equipment

Ingredients

  • 32 ounces frozen Italian style meatballs see notes
  • 2 cups no sugar added marinara
  • 1 ½ cups shredded mozzarella
  • ½ cup shredded Parmesan
  • Parsley for garnish

Instructions

  • Add the meatballs to a slow cooker and pour the marinara over the top.
  • Top with the mozzarella and parmesan cheese.
  • Cover and cook on high for 3-4 hours or until the cheese has melted and the meatballs are hot.
  • Sprinkle with parsley before serving.

Notes

We use Great Value Italian Style meatballs. They have 5 total carbs per 6 meatballs. If you use a different brand of meatballs, the nutrition info will change accordingly.
We prefer Rao’s marinara, but any sauce without added sugars should work great here.
Serve this over cauliflower rice, zucchini noodles, or spaghetti squash. It also makes great sandwiches for those not watching carbs.
