These easy keto waffles are made with almond flour, eggs, butter, and vanilla for a crispy exterior and tender center. Low carb and gluten-free with just 8 simple ingredients.
Add the almond milk, eggs, butter, and vanilla to a medium mixing bowl and whisk well to combine.
Once smooth, stir in the almond flour, sweetener, baking soda, cinnamon, and salt. Stir until smooth. The mixture will be thick.
Once the waffle iron is preheated, spray with non-stick spray and add batter to the iron. Cook for about 3 minutes or until the waffles are golden brown and have stopped releasing steam.
Repeat process with remaining batter, keeping cooked waffles warm on a baking sheet in a 200 degree oven until ready to serve.

Be sure to use superfine ground almond flour for the best results. We use Bob’s Red Mill.For the sweetener, any granulated sweetener that measures 1:1 for sugar will work. I like Lakanto or Swerve. Brown sugar sweetener would also work well here.The cinnamon is completely optional, but we love the little bit of flavor and warmth it adds.I have a couple of waffle makers and prefer the smaller Dash waffle maker for these. It holds around ¼ cup of batter and this recipes makes 2 cups of batter (8 total waffles). The number of waffles you end up with will vary depending on the size of your waffle maker. Serve with your favorite keto syrup (I like this one) and butter.
