Lemon Pepper Salmon and Broccoli

Ingredients

  • 1 ½ pounds salmon cut into 4 filets about 1 ½ inches thick
  • 1 pound broccoli florets
  • 5 tablespoons melted butter
  • 2 cloves garlic minced
  • 2 tablespoons lemon juice
  • 2 tablespoon lemon pepper seasoning
  • Fresh parsley for garnish

Instructions

  • Preheat oven to 425 degrees.
  • Arrange the salmon filets down the center of a sheet pan, skin side down. Place the broccoli florets in a mixing bowl.
  • In a small bowl, combine the butter, garlic, lemon juice, and lemon pepper. Whisk to combine.
  • Spoon about half of the mixture evenly over the salmon to coat. Pour the remaining butter mixture over the broccoli and toss to coat.
  • Arrange the broccoli on the sheet pan around the salmon.
  • Bake for 18 minutes or until salmon is cooked through.
  • Sprinkle salmon with parsley before serving.

Notes

If your salmon filets are thinner than 1 ½ inches, they’ll bake faster than called for. Aim for about 4-6 minutes per ½ inch. The broccoli will take about 18 minutes to roast properly at 425 degrees, so if your salmon is thinner, you’ll want to start the broccoli first and add the salmon after it’s partially cooked.
