Cucumber Tomato Feta Salad

Ingredients

  • 2 English cucumbers
  • 6 ounces cherry tomatoes, halved
  • ΒΌ cup thinly sliced red onion
  • 2/3 cup crumbled feta cheese
  • 2 tablespoons fresh parsley
  • 1 tablespoon fresh dill
  • 3 tablespoons olive oil
  • 3 tablespoons red wine vinegar
  • Salt, to taste

Instructions

  1. Slice the cucumbers in half length-wise and then chop into 1/2 in chunks. Add to a large mixing bowl with the tomatoes, red onion, and feta.
  2. Sprinkle with the parsley and dill and drizzle with olive oil and red wine vinegar.
  3. Toss to coat the mixture in the dressing and then salt to taste.
  4. Store tightly covered in the refrigerator for up to 4 days.

Notes

You may use 1 teaspoon dried dill in place of fresh, if needed.
