Ingredients

  • 1 pound lean ground beef
  • ½ onion, chopped
  • 2 stalks celery, chopped
  • 1 carrot, chopped
  • 2 cloves garlic, minced
  • 1 medium head cabbage, chopped
  • 5 cups beef broth
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt

Instructions

  1. Brown the beef in a medium skillet over medium heat, breaking it up as it cooks, until mostly cooked through.
  2. Add the onion to the beef and continue cooking until meat is completely cooked through.
  3. Drain the grease and add the beef and onion to a 5 quart crockpot.
  4. Add the celery, carrot, garlic, cabbage, beef broth, Italian seasoning, and salt to the crockpot and cover.
  5. Cook on high for 4 hours.

Notes

Carrots are generally not found in low carb recipes, but 1 carrot divided among 6 servings adds less than 1 additional net carb per serving. You may omit as desired.
