Almond Flour Peanut Butter Cookies

Instructions

  1. Preheat oven to 350 degrees.
  2. Add the peanut butter, brown sugar, egg, and vanilla to a mixing bowl and beat with an electric mixer until well combined.
  3. Add the almond flour and baking soda and mix well.
  4. Use a medium cookie scoop to scoop out 18 balls of dough onto a parchment lined baking sheet.
  5. Use a fork to make a crisscross pattern in each ball of dough.
  6. Bake for 8-9 minutes or until the cookies are set on the edges. Do not overbake.
  7. Allow cookies to cool on the baking sheet for 10 minutes before transferring to a cooling rack.

Notes
