Fajita Baked Chicken

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil, divided
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 bell pepper, any color
  • 1 medium onion
  • 1 ½ cups shredded pepper jack cheese
  • Cilantro, for garnish

Instructions

  1. Preheat oven to 400 degrees. Spray a baking dish with non-stick spray.
  2. Pound the chicken breasts out to an even thickness and place in the baking dish. Drizzle both sides with about 2 teaspoons of olive oil.
  3. Add the chili powder, cumin, paprika, garlic powder, and salt to a small bowl and stir to combine.
  4. Sprinkle all but 1 teaspoon of the seasoning over the chicken, coating both sides with the seasoning.
  5. Slice the bell pepper and onion into strips, drizzle with the remaining oil, and sprinkle on the seasoning. Toss to coat.
  6. Place the vegetables over the chicken breasts.
  7. Sprinkle the cheese over the top of the dish.
  8. Bake, uncovered, for 20-25 minutes or until the chicken reaches an internal temperature of 165 degrees.
  9. Sprinkle with cilantro before serving.

Notes

We used half of a red pepper and half of a green pepper in this recipe. You may use any color you prefer.
