Charred Green Beans

These green beans are made with just a handful of ingredients and cook so quickly in a hot skillet. These make a great side dish for a busy weeknight, but they also work great for a holiday dinner.

Ingredients

  • 2 pounds fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon cracked pepper
  • Juice of 1 lemon

Instructions

  1. Turn oven to warm, or heat to 180 degrees.
  2. Add the green beans, olive oil, salt, and pepper to a large bowl and toss well to combine.
  3. Heat a cast iron skillet over medium-high heat until very hot.
  4. Add about ¼ of the green beans to the skillet, trying to keep the beans to a single layer, and cook for 2 minutes without stirring.
  5. Stir the beans and cook for 4-5 more minutes or until charred and tender. 
  6. Transfer to a rimmed baking dish and place in the warm oven. 
  7. Repeat with the remaining green beans.
  8. Transfer all of the beans to a serving dish and sprinkle with the fresh lemon juice. Season with additional salt and pepper, as needed, before serving.
