Ingredients

  • 1 dozen eggs
  • 1/2 cup milk
  • 1 tablespoon hot sauce
  • 1 pound cubed ham
  • 6 slices bacon, fried and crumbled
  • 2 cups grated cheddar
  • 1/2 sweet onion diced
  • 4 ounces canned mild green chiles, diced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Pre-heat the oven to 350 degrees. Spray a 9x13 baking dish with non-stick spray.
  2. Crack the eggs into a large mixing bowl and add the milk and hot sauce. Whisk together until well combined.
  3. Stir in the ham, bacon, cheddar, onion, chiles, salt, and pepper. Stir until well combined.
  4. Pour the mixture into the prepared baking dish and bake for 35-40 minutes or until eggs are set and edges are golden brown.
  5. Let cool 5 minutes before slicing and serving.

Notes

Serve with sour cream and green onions, if desired.

Use almond milk or heavy cream in place of cow's milk, if desired.
