Ham Casserole with Cauliflower Rice

  • 16 ounces frozen riced cauliflower
  • 12 ounces broccoli florets
  • 2 cups diced ham
  • 3 cups grated cheddar, divided
  • 2 large eggs
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cracked pepper
  • 1/4 teaspoon mustard powder


  1. Preheat oven to 350 degrees.
  2. Cook the frozen cauliflower according to package directions.
  3. Add the broccoli to a large bowl with 2 tablespoons of water. Cover with plastic wrap and microwave for 3 minutes. Let sit for 5 minutes. Remove the plastic carefully and drain the liquid from the bowl.
  4. Add the cooked cauliflower rice to the broccoli along with the ham, 2 1/2 cups cheddar, egg, and spices. Stir well to combine.
  5. Spread mixture into 9x13 baking dish and sprinkle the top with remaining 1/2 cup cheese.
  6. Bake uncovered for 30 minutes.
  7. Serve immediately.


We like to use frozen riced cauliflower and fresh broccoli florets in this recipe, but frozen or fresh work for both. We use the microwave to cook the veggies, but you can also steam on the stove.

You may use leftover ham or buy the packages of pre-diced ham at the store for this casserole.
